Blueberry Cake

Ingredients
- 115 gr frozen blue berries
- 115 gr all purpose flour
- 115 gr white sugar
- 1/2 tsp kosher salt
- 3/4 tsp baking soda
- 115 gr extra virgin olive oil
- 115 ml juice or water or tea
- 2 large eggs
- 7 gr (1.5 tsp) vanilla extract
Steps
- Preheat oven to 350 F
- Line loaf pan with parchment
- In a medium mixing bowl whisk together flour, sugar, salt, and baking soda
- In a seperate bowl whisk to combine olive oil, juice/water, eggs, and vanilla.
- Stir the dry and wet ingredients and the blueberries together to make the batter.
- Bake ~40 minutes until a skewer comes away clean.
- Cool cake in the pan for an hour.
