Ingredients:
- 1 egg yolk (see note)
- 1 tablespoon (15ml) juice from 1 lemon
- 4 oil-packed anchovy fillets, (recipe says 2, or more to taste, up to 6 fillets (see note))
- 1 teaspoon (5ml) Worcestershire sauce (see note)
- 2 medium cloves garlic, minced (about 2 teaspoons)
- 1/2 ounce Parmesan cheese, finely grated (15g; about 1/4 cup)
- 1/3 cup (80ml) avocado oil
- 1/4 cup (60ml) extra-virgin olive oil
- 1/4 tsp Kosher salt (absolute minimum)
- 1/4 tsp freshly ground black pepper (minimum)
Steps:
- finely chop the garlic, anchovy filets, and finely grate or chop the parmesan cheese
- Combine egg yolk, lemon juice, anchovies, Worcestershire sauce, garlic, minimum salt and pepper and Parmesan cheese in a 2 cup jar
- Using the whisk attachment on an immersion blender begin whisking the dressing and drizzling the avocado oil
- whisk in the olive oil
- taste and adjust salt / pepper
