Ingredients:
- 1 chicken ~4 LB
- 16 cups water
- 2 stalks celery
- 2 medium onions quartered
- 10 whole black peppercorns
- 2 bay leaves
Steps:
- Put all ingredients in a pressure cooker, and cook at high pressure for 1 hour
- Let cooker depressurize natrually
- Reserve boiled chicken for other purposes
- Strain stock, and cool in the fridge for about a day
- remove the fat cap.
- Bring stock to a boil, add to warmed jars
- Pressure can quart jars for 25 minutes, pint jars for 20 minutes at ~12 PSI (in Tucson).
