Steps:

  1. Put all ingredients in a pressure cooker, and cook at high pressure for 1 hour
  2. Let cooker depressurize natrually
  3. Reserve boiled chicken for other purposes
  4. Strain stock, and cool in the fridge for about a day
  5. remove the fat cap.
  6. Bring stock to a boil, add to warmed jars
  7. Pressure can quart jars for 25 minutes, pint jars for 20 minutes at ~12 PSI (in Tucson).
