Steps:

  1. Combine garlic, brown sugar, rice vinegar, fish sauce siracha, and soy sauce to make a sauce.
  2. Add 1/4 cup of sauce to chicken and let marinate 15 minutes
  3. Sweat the onions and the peppers in 1 TBsp oil with a pinch of salt
  4. once onion is soft / translucent reserve to a plate
  5. Heat pan over high heat
  6. Add remaining tbsp of avocado oil to pan and add chicken.
  7. Cook until chicken pieces are a deep brown 5-10 minutes
  8. Reduce heat to medium, add in peppers / onions, cashews, and remaining sauce
  9. Simmer until heated through and desired consistency ~5 minutes

Notes:

It's basically fine to sub the chicken for pressed extra firm tofu, but it did absorb more liquid.
