Ingredients:
- 4 cloves minced garlic
- 50 gr brown sugar
- 40 ml rice vinegar
- 40 ml fish sauce
- 1 TBsp siracha
- 1 tsp soy sauce
- 1 lb boneless skinlees chicken breast cut into 1.5 inch pieces
- 2 TBsp vegetable oil
- 1 cup diced onion
- 1 cup diced bell pepper
- 1/2 cup chopped cashews
Steps:
- Combine garlic, brown sugar, rice vinegar, fish sauce siracha, and soy sauce to make a sauce.
- Add 1/4 cup of sauce to chicken and let marinate 15 minutes
- Sweat the onions and the peppers in 1 TBsp oil with a pinch of salt
- once onion is soft / translucent reserve to a plate
- Heat pan over high heat
- Add remaining tbsp of avocado oil to pan and add chicken.
- Cook until chicken pieces are a deep brown 5-10 minutes
- Reduce heat to medium, add in peppers / onions, cashews, and remaining sauce
- Simmer until heated through and desired consistency ~5 minutes
Notes:
It's basically fine to sub the chicken for pressed extra firm tofu, but it did absorb more liquid.
