Ingredients:
- 75 grams unsalted cashews
- 375 ml water
- 4 large cloves of garlic
- 1 Tbsp avocado oil
- 1/4 cup chopped fresh parsley
- 8 oz pasta
- salt & pepper
Steps:
- Bring water to a boil for the pasta
- Make cashew cream by blending the cashews and 375 ml of water
- Mince the garlic, and finely chopp the parsley
- Once the water is boiling add the pasta
- Cook the garlic over medium heat in the avocado oil for a minute
- Add the cashew cream
- bring to a boil and reduce over medium low heat while the pasta cooks.
- Stir in salt (a large pinch), pepper (~30 grinds), and parsley
- Add pasta to the sauce and mix over medium heat until combined.
Notes:
On 2021 Aug 26 I added 190 grams of peas, and 16 oz of roasted mushrooms when mixing the pasta and the sauce.
