Ingredients:
- 20 grams molasses
- 95 grams white sugar
- 42 grams dutch processed cocoa
- 1/2 tsp kosher salt
- 3/4 tsp baking soda
- 127 grams olive oil
- 115 grams brewed coffee, tea, or water
- 2 large eggs (straight from the fridge)
- 7 grams vanilla extract (1.5 tsp)
- 70 grams whole wheat flour
Steps:
- Preheat oven to 350 F
- Line loaf pan with parchment
- In a medium mixing bowl combine sugar, cocoa powder, salt, and baking soda. Whisk until homogenous.
- Whisk in molasses, olive oil, coffee / tea, eggs and vanilla.
- When smooth and emulsified add whole wheat flour and mix till just combined
- Transfer to lined pan
- Bake for 25 minutes or until a skewer inserted into the center is clear.
- Cool in pan for 1 hour.
