Clam Chowder

Ingredients
- 2 slices bacon cut into small pieces
- 1/2 yellow onion - diced
- 1 rib celery - diced
- 2 cloves garlic minced
- 1 8 oz bottle clam juice
- 1 pint chicken broth
- 1 cup cubed yukon gold potatoes
- 3 6.5 oz cans of clams (drained)
- 1.5 cups cashew cream
Steps
- cook bacon in a little bit of oil
- stir until fat renders and bacon is slight browned 3-5 minutes
- add onion to bacon and cook until soft 5 minutes more
- Add celery and garlic and cook 1 minute more
- add clam juice, chiken broth, potato, and some pepper
- simmer until potatoes are almost tender 12 - 15 minutes
- Stir cream into potato mixture and simmer a few more minutes until potatoes are completely tender.
- Add clams and heat through.
Notes
- Overall this was too thin. It wasn't bad, but definitely not great.
