• 1200 grams potatoes -- peeled 3/8" diced _ grams (maybe shoot for 1 kg) post dice
• 500 ml chicken broth
• 1 tsp kosher salt
• 1/2 tsp ground black pepper
• Pinch cayenne pepper
• 100 ml heavy cream
• 60 ml milk
• panko + butter to coat ~3/4 cup + 1 Tbsp butter
• 85 grams cheese
