Ingredients:
- 1 clove garlic finely minced
- 1 tbsp avocado oil
- 10 oz frozen asparagus - thawed and chopped into 1 inch spears
- 20 floz home made salt free stock
- ~50 grinds black pepper
- 2 tsp diamond crystal kosher salt
Steps:
- saute garlic and 1 tsp salt over high heat for ~30s
- add pepper, saute for 10s
- add stock and chopped asparagus
- bring to a boil, reduce to a simmer, and simmer for 10 minutes until asparagus is tender
- Blend thoroughly in the vitamix
- pour back into pot through a strainer
- return to a simmer, season with additional salt and pepper.
