Ingredients:
- 24 oz potatoes (russet or yukon gold)
- 1/2 onion
- oil, salt, pepper
Steps:
- Grate the potatoes into a bowl using the large holes of a box grater
- Grate the onion in with the potatoes
- Preheat skillet over medium high (8/10) heat with oil
- Pour potatoes and onion onto a wash cloth / towel and squeeze dry
- toss with salt and pepper
- Add seasoned potatoes to skillet and push down with a spatula
- After 4 minutes reduce heat to medium low (2/10)
- Cook for 8 more minutes
- Flip potatoes and cook for 10 more minutes.
