Steps:

  1. Grate the potatoes into a bowl using the large holes of a box grater
  2. Grate the onion in with the potatoes
  3. Preheat skillet over medium high (8/10) heat with oil
  4. Pour potatoes and onion onto a wash cloth / towel and squeeze dry
  5. toss with salt and pepper
  6. Add seasoned potatoes to skillet and push down with a spatula
  7. After 4 minutes reduce heat to medium low (2/10)
  8. Cook for 8 more minutes
  9. Flip potatoes and cook for 10 more minutes.
