Steps:

  1. Salt both sides of the tenderloin (more on what will be the outside) being mindful of salt in the sauce ingredients.
  2. Add the sauce ingredients, and panko to the rolled out tenderloin, roll it up, and tie it up.
  3. Rest for 1 hour
  4. Cook in a warm ~120C oven until it reaches an internal temp of ~110F.
  5. Remove from oven, and sear on all sides.
