Ingredients:
- 1/2 onion
- 1/2 lb ground beef
- .75 lb black beans (rinsed and drained if canned)
- 2 cups stock
- 2 cups water
- 1/2 lb pasta
- 1 Tbsp corn starch
- 1 Tbsp chili powder
- 2 tsp garlic powder
- 1 tsp sugar
- 2 tsp salt (assumes no salt added beans and stock. Reduce if there are other sources of salt)
- 3/4 tsp paprika
- 1/4 tsp cayenne
- pinch crushed red pepper flakes
- 2 oz shredded miyokos cheese
Steps:
- sweat onion over medium low heat with 1/4 tsp salt
- remove onion, increase heat to medium high and brown ground beef
- return onion, add spices, and cook for 1 minute
- add corn starch, beans, pasta, stock, water stir to combine
- bring to a boil, reduce to a simmer, and cook uncovered until the pasta is done. Add more water if needed (uncovered is definitely better than covered).
- add the cheese and stir to combine.
