Ingredients:
- 1/2 onion diced
- 1/2 small cabbage (TODO note weight)
- 8 oz mushrooms
- 12 oz impossible ground beef
- 1 tsp chicken better than boullion
- 250 ml water
- 750 ml cashew cream (1 batch)
- 8 oz pasta
- 1 Tvsp cornstarch
- 1 Tbsp chilli powder ancho / gaujillo chilli powder
- 2 tsp garlic powder
- 1 tsp paprika
- 1/4 tsp cayenne pepper
- salt (~2 tsp), pepper (~1 tsp), worcestershire sauce (~1 tsp), white wine vinegar (~1.25 tsp) to taste
Steps:
- Brown ground beef + 1/2 tsp salt over medium high heat, remove.
- add 1/4 cup water + mushrooms to the pan, cook until nearly all the water is gone with ~1/2 tsp salt
- add onions and sweat onion over medium low heat with 1/4 tsp salt
- add spices and ground beef and cook for 1 minute
- add corn starch, cabbage, pasta, better than boullion, cashew cream and water stir to combine
- bring to a boil, reduce to a simmer, and cook uncovered until the pasta is done. Add more water if needed (uncovered is definitely better than covered).
Notes:
For farfale pasta I had to add an extra 250 ml of water, and it took like 25 minutes to cook the pasta. Macaroni would probably be better.
