Ingredients:
- 2 cups dry green lentils picked over / rinsed
- 1 small yellow onion
- 4 cloves garlic
- 2 tbsp oil
- 2 TBSP taco seasoning
Steps:
- Bring 7 cups of water to a rolling boil, add 1/2 tsp salt and the lentils, return to a boil and reduce heat to low.
- Simmer covered for 30 - 40 minutes.
- Drain the lentils
- In a large skillet over medium heat sweat the onions.
- When translucent / tender add the garlic and taco seasoning, and cook for 1 minute.
- Add the lentils and a half cup of water. Stir and cook over medium heat until its a thich sauce (~5 minutes).
- Season to taste.
