joe found it littlw bland. maybe a touch of something to the sauce
250 grams spiral pasta
1 garlic clove -- diced
1 tsp english mustard
20 grams flour
30 grams butter
360 ml whole milk
65 grams double gloucester cheese
150 grams mature cheddar cheese
45 grams camembert
50 grams onion topping
Salt + Pepper
Begin boiling the pasta in smallest pot that can accomidate with ~1% salt by weight. Cook until very al dente (2 minutes less than instructions?).
Make roux with butter + flour + mustard and cook for 1 minutes ( blond roux)
Add the garlic + some black pepper and cook 30s - 1 minute more
Whisk in cold milk, bring to a simmer and simmer for 5 minutes whisking basically constantly
Remove from heat, stir in cheese until well melted
Stir in pasta, top with fried onion
Bake for 15 minutes covered + 5 minutes uncovered at 200C. (I was a little worried about the fried onion catching, so did this).
Rest for 5-15 minutes

40 grams pre-shredded mozzarella
25 grams Parmesan

It's been several weeks since I wrote out this ingredient list. I think I mostly followed the BBC recipe, and it turned out okay? I don't really remember for sure as this was really mostly about soaking up leftovers.
