Ingredients:
- 37.5 grams pickled garlic
- 12.5 grams chopped fresh garlic
- 21.25 grams fresh tahi chilli pepeprs
- 3/8 cups (6 TBSP) chilli sauce (sambal)
- 2 TBSP pickeld garlic juice
- 75 grams white sugar
- 75 grams brown sugar
- 46.875 ml (3 TBSP) distilled white vinegar
- 3 TBSP tamarind concentrate
- 1 tsp salt
- 1 TBSP fish sauce
- 1.75 cups water
Steps:
- Add all ingredients to vitamix, and blend to a smooth consistency.
- Transfer to pan and reduce by about half.
Notes:
yielded 2 cups.
The reduction is important. It darkened the liquids kind of like boiling beer is important (beyond the sanitization aspect).
