Ingredients:
- 3 lbs boneless skinless chicken thighs (about 7)
- 3/4 cup pesto
- 3 oz baby spinach
- 1/2 pint cherry tomatoes
- 13 oz fresh mozzarella
- 1/2 cup grated Parmesan cheese
Steps:
- Place chicken thighs into baking dish
- Cover with half of the pesto
- Add a layer of half the spinach
- Add a layer of half the mozzarella.
- Add another layer of chicken thighs and repeat 2 - 4
- Surround with cherry tomatoes
- place in a preheated 400 F oven for 40 - 45 minutes
