Ingredients:
- 4 strips of bacon cut into lardons
- 1 leek (~1/2 lb) cleaned, and chopped
- 1 sweet onion (~1 lb) diced
- 1.5 lbs yukon gold potatoes, peeled, cut into eighths
- 3 cups chicken broth
- 1 cup heavy cream
- Cayenne, salt to taste
Steps:
- Cook the bacon over medium heat rendering fat. Once crisp transfer to a paper towel lined plate
- Add leeks, onion, and salt, and cook slowly over medium-low heat until paste like 30 - 40 mintues
- Add potatoes, chicken broth, and more salt to pot. Cook until potatoes are soft ~30 minutes
- Puree the mixture with a blender
- return to pot, and bring up to serving temperature taste for seasoning (cayenne, salt), I added a bit of cholula
