Ingredients:
- 2 Tbsp avocado oil
- 1 large yellow onion diced
- 2.5 tsp diamond crystal kosher salt
- 3 Tbsp tomato paste
- 4 cloves garlic
- 2 tsp ground cumin
- 1/8 tsp cayenne pepper
- 1 quart chicken stock
- 1 cup red lentils
- 1 cup frozen celery
- 1 cup frozen carrots
- 1 Tbsp apple cider vinegear
- 1.5 tsp cholula
Steps:
- sweat the onion with the salt over medium heat for 3-5 minutes
- add the tomato paste and saute another 3-5 minutes
- add garlic cumin and cayenne, and cook stirring for 2 more minutes
- add the broth, lentils, celery and carrots
- bring to a boil, and reduce to low. Cook stirring occasionally for 30 - 40 minutes.
- Taste the soup, add cholula and more salt / pepper if needed
