Steps:

  1. Microwave halved potatoes for ~4-6 minutes on high until tender (see food wishes) -- maybe toss with 1/4 tsp baking soda -- on next experiment
  2. Cool potatoes
  3. Heat oven to 400 F
  4. Cut potatoes in to 1/4ths - 1/6ths (cut each half potato into 1/2 to 1/3drd)
  5. Generously cover pan in avocado oil, or other oil
  6. Salt with ~1/2 tsp salt
  7. Roast potatos for ~20 minutes then flip
  8. Roast potatoes for ~15 minutes more and flip / toss
  9. Roast potatoes for ~15 minutes more
  10. Remove potatoes, toss with herbs, salt, black pepper to taste

Notes:

2022-Oct-29 -- Used yukon golds. Probably 2.5 lbs before and like 1.5 lbs after peeling (old potatoes). Microwaving took ~6 minutes.
