Ingredients:
- 2.5 pounds yukon gold potatoes peeled and cut in half
- 3+ Tbsp avocado oil (or other fat)
- salt + black pepper + herbs to taste
Steps:
- Microwave halved potatoes for ~4-6 minutes on high until tender (see food wishes) -- maybe toss with 1/4 tsp baking soda -- on next experiment
- Cool potatoes
- Heat oven to 400 F
- Cut potatoes in to 1/4ths - 1/6ths (cut each half potato into 1/2 to 1/3drd)
- Generously cover pan in avocado oil, or other oil
- Salt with ~1/2 tsp salt
- Roast potatos for ~20 minutes then flip
- Roast potatoes for ~15 minutes more and flip / toss
- Roast potatoes for ~15 minutes more
- Remove potatoes, toss with herbs, salt, black pepper to taste
Notes:
2022-Oct-29 -- Used yukon golds. Probably 2.5 lbs before and like 1.5 lbs after peeling (old potatoes). Microwaving took ~6 minutes.
