Saag Paneer

Steps:

  1. Fried the onion, tomato + chilli in ghee
  2. Added garlic + ginger
  3. Added spices, and toasted for a minuted
  4. Added thawed spinach + a little water as needed
  5. Brown and cut the paneer (see notes)
  6. Simmered for 5 minutes
  7. Blended with hand blender to smooth consistency
  8. Added paneer
  9. Simmered for a few more minutes

Notes:

I browned the paneer on both sides, cut in half, and flipped each half and browned on both sides again (browning the previous "outside" edge). Then I cut it into ~16 pieces. The pieces were too big, and hard to cut with a spoon. Either cut into like 48 pieces, or maybe simmer longer, or something.

The paneer was also pretty under seasoned, again maybe smaller chunks, and simmering longer or something.

The overall flavor was okay for my first attempt, but it wasn't great.
