Ingredients:
- 1 - 2 TBSP of ghee / avocado oil / canola oil
- 14 oz beef smoked sausage sliced into 1/4 inch thick rounds
- 1 green bell pepper, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup white or yellow onion, diced
- 1/2 head of cabbage, chopped
- 2-3 cloves garlic, minced
- 4 cups chicken broth
- 14 oz can basil, oregano, garlic diced tomatoes
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 bay leaf
- 1/2 teaspoon red pepper flakes
- several grinds of black pepper
Steps:
- Brown the sausage in 1 - 2 TBSP of oil over medium - high (6-7) heat
- remove the sausage leaving the fat
- add the bell pepper, and cook for 3-5 minutes
- add the carrot and cook for 2-3 minutes
- add the celery and cook for 2-3 minutes
- add the onion and cook until all vegetables look good
- add the garlic and the cabbage and cook for 2-3 minutes
- pour in chicken broth and tomatoes
- bring to a boil, reduce heat to low (min - 2)
- Add seasonings
- cook for ~20 - ~40 minutes depending on time on low.
- taste / adjust seasoning.
