  1. In a stock pot over medium low heat at the onions, carrots, celery and salt, and sweat until transluscent about 10 minutes
  2. add the garlic, bay leaf and chilli flakes, and cook for 1 or 2 minutes more.
  3. Add the sausage, borth, water, and lentils, stir to combine
  4. increase heat to high
  5. add the greens, and bring the soup to a boil, then reduce heat to low and simmer for 20 minutes.
