Ingredients:
- 1/2 tsp salt
- 1/2 onion diced ~1 cup
- 1/2 cup frozen diced carrots
- 1/2 cup frozen diced celery
- 4 cloves of garlic
- 1 bay leaf
- 1/8 tsp chilli flake
- 2 cups chicken broth
- 1.5 cups water
- 8 oz frankfurter brats cooked sous vide at 160 F for 1 hour, sliced
- 3/4 cup red lentils
- 1 bunch dehydrated swiss chard (this was in 2 pint jars, but it probably could fit in 1)
Steps:
- In a stock pot over medium low heat at the onions, carrots, celery and salt, and sweat until transluscent about 10 minutes
- add the garlic, bay leaf and chilli flakes, and cook for 1 or 2 minutes more.
- Add the sausage, borth, water, and lentils, stir to combine
- increase heat to high
- add the greens, and bring the soup to a boil, then reduce heat to low and simmer for 20 minutes.
