Steps:

  1. Sweat onion, celery, and carrots in a pot for 10 minutes
  2. Add half the minced garlic
  3. Add 4 cups broth (better than bouillon)
  4. Add kale, and simmer for 30 minutes until tender
  5. remove the shells from the shrimp, and saute them in olive oil with garlic
  6. Add 2 cups water to shrimp shells and let simmer
  7. Combine couscous, oliveoil, and salt + pepper in a stainless steel bowl
  8. Saute shrimp ~1 minute per side
  9. Add the shrimp to the cous cous
  10. Strain the kale + onion + carrot + celery and add the solids to the cous cous
  11. Strain the shrimp shells and add the liquid to the couscous
  12. Cover very tightly, and let sit for 5 minutes
