Ingredients:
- 1.5 cups (1 package) couscous
- 3 Tbsp olive oil
- 1 bunch kale, stems removed finely chopped
- 1/2 onion
- 1/2 cup carrot
- 1/2 cup celery
- 8 cloves garlic minced (divided)
- 1 lb shrimp
- 2 cups water
Steps:
- Sweat onion, celery, and carrots in a pot for 10 minutes
- Add half the minced garlic
- Add 4 cups broth (better than bouillon)
- Add kale, and simmer for 30 minutes until tender
- remove the shells from the shrimp, and saute them in olive oil with garlic
- Add 2 cups water to shrimp shells and let simmer
- Combine couscous, oliveoil, and salt + pepper in a stainless steel bowl
- Saute shrimp ~1 minute per side
- Add the shrimp to the cous cous
- Strain the kale + onion + carrot + celery and add the solids to the cous cous
- Strain the shrimp shells and add the liquid to the couscous
- Cover very tightly, and let sit for 5 minutes
