Stuffing Scale

Ingredients
- 350 grams bread -- dried in the oven @ 275 for ~50 minutes
- 30 grams butter
- 100 grams diced onion
- 100 grams diced celery
- 1 clove garlic
- 1/2 tsp dried sage
- 280 ml stock
- 1 medium egg
- salt + pepper
- 1 Tbsp minced parsley
Steps
- sweat the onion in the butter over medium heat for ~10 minutes.
- Add the garlic + sage + black pepper
- Remove from heat and add half the stock to deglaze
- Mix the egg + remaining stock + parsley, and temper in the onion + stock mixture
- fold in bread mixture and bake at 175C covered for 45 minutes (internal temp of ~150F) then uncovered 15 minutes longer
