- 2 containers 715 grams bean / lentil chilli
- 160 grams ground beef
- 1 onion diced (200 grams)
- 2x 170 gram packages gladiola cornbread mix
- 2 eggs ~120 grams
- 180 ml milk
- 70 grams thawed frozen corn
- 70 grams mature cheddar
- 70 grams red leicseter cheese
Steps:
- Brown ground beef in a pan, then remove
- Add onion, and sweat till well cooked
- Add lentil chilli, and cook down till a kinda thick texture, season to taste. It needs to taste good. The food wishes recipe had a pretty 'dry' mixture.
- In a parchment lined loaf pan layer:
- 235 grams of corn bread mixture
- thawed frozen corn
- 70 grams of cheese
- beef / chilli mixture
- mix 70 grams of cheese with remaining corn bread mixture and cover the top.
- Bake at 170C Fan for 45 minutes until an internal temp of 160 F
Note when I made this on 17 Oct 2025 there was too much corn bread. It could probably have been halved and still come out okay. I also had about 200 grams of beef / chilli mixture that I saved for a lunch.
