Ingredients:
- 1/2 onion, diced
- 1/2 cup celery diced
- 1/2 cup carrot diced
- 3 cloves garlic
- 1 tbsp olive oil
- 1 tbsp butter
- salt to taste
- freshly ground black pepper to taste
- cayenne to taste
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried thyme leaves
- 1 quart jar white kidney beans
- 4 cups chicken broth
- 1/2 lemon, juiced
Steps:
- Sweat onion celery and carrot until onion is translucent.
- add garlic and cook for one more minute till fragrent
- Season with pepper rosemary thime and cayenne pepepr set heat
- Add beans and broth
- Bring to a simmer over medium high heat.
- Reduce heat to low and simmmer until vegetables are tender
- Blend soup
