Steps

  1. Blanch cleaned escarole
  2. Coat a large (oven safe) pan with olive oil over medium heat.
  3. Saute the prosciutto, and peppers
  4. After 4 minutes add the garlic
  5. After 1 more minute add the greens and 1/2 Parmesan and mix thoroughly.
  6. Cook for 3 - 4 more minutes.
  7. sprinkle on remaining cheese
  8. Broil until golden brown and delicious.
